My interest was sparked when RB and I received a hand delivered invitation to a special microbrew beer pairing dinner at Rolling Meadows Brewery. Rolling Meadows is owned and operated by the Trudeau family, and is located in Cantrall, Illinois, just a short drive from my hometown of Springfield. These are exceptional, small batch beers that start with hops grown on the farm where the brewery is located. The enthusiasm and dedication of Rolling Meadows Brewery and the Trudeau family to handcrafting the best microbrewed beer is truly admirable. I was completely impressed with the quality and selection of their microbrews. Being a baker, I must admit my favorite part of the production facility tour was the huge, steel grain mill (I secretly wondered if I could get them to grind wheat for bread for me). The Rolling Meadows facility and grounds are aesthetically striking and immaculate. Taking in the fields of grain, their raised bed vegetable gardens, and hops, not to mention the sunset, I was transported to a place of appreciation and calm. If generosity and hospitality can be brewed and bottled, you can find it in RMB beer.
Desert was my favorite course (big surprise) – Lemongrass Basil Sorbet.
The small plate that completely wowed me – Eggplant Caprese.
